    Couple things. Over the last five-six years there was a serious trend of cooking fries/frites in duck fat. So much so that Kroeger now sells their imprint “Private Select” Duck Fat in a 10oz jar.

    Contrary to Shake Shack’s claim, which IMHO is marginally better fast food and definitely not worth the premium price of $6 for a Shack cheeseburger, the original recipe for fries is unknown but were cooked in animal fat. Now at the time in Belgium, hog fat and even horse fat are the most likely candidates. Now you are most likely to find Duck fat at an Antwerp frite carte, see fads and trends.

    But I digress. Beef tallow was used at McDonald’s for decades but the bean counters figured out that oil mixed with beef flavoring was far cheaper. No, MickeyDs fries are not vegetarian. Now Shake Shack’s fries, crinkle cut and a crime against crispy potatoes, if I remember are $3.50 in Seattle, one size only. By volume it is slightly larger than a McD small but quite a bit smaller than a McD medium $2.29. Shake Shack’s local similar competitors Dicks sells the worst fries imaginable but they are $1.50 and Burger Master has the same size at $3 and a massive portion at $4.50.

    By moving to Beef Tallow the inevitable private equity takeover of Shake Shack will either price those considerably higher or switch back to oil. And then put the Fry Sauce in a bottle to be sold at grocery stores everywhere while shrinking burger sizes to maximize shareholder value.

    They do make a good butterflied and flat top grilled hot dog. Pro Tip, it’s the best and cheapest thing on the menu.

    *Zim’s is a now defunct local chain from my childhood/teen years. At it’s peak there were 26 Zim’s. The one next to the bowling alley, also now gone, was my hangout.     A little update on the story I mentioned a few days ago about the naming of two new Ford Class CVNs after the 42nd and 43rd presidents. Naming a Burke class DDG the Intrepid is not good for a different reason, in my opinion. Destroyers, except for a few Burke class DDGs named after politicians (who chaired armed services committees), are named after war heroes. Although the USS Daniel K Inouye is named after a Medal of Honor recipient who was a US Senator, and President Pro Tempore of the Senate. The Constellation class Frigates are supposed to be named after historic US Navy warships, but Lafayette and Galvez are named after Revolutionary War Heroes, and the future USS Everett Alvarez is named after the first American POW of the Vietnam War.
